We have been searching our archives and, perhaps surprisingly, can find no record of us ever having stocked this tea, despite the resonant name, and particularly 3rd-generation Alastair’s weakness for wordplay! So here it is!
Dong Ding Oolong Tea, also known as Frozen Summit Oolong, is a Taiwanese oolong tea that has garnered positive reviews for its unique flavour profile and craftsmanship.
The tea is known for its roasted nutty aroma, honey sweetness, ripe fruit notes, caramel, mellow body, and long hui gan (sweetness). It should feel smooth, rounded, and sweet, not burnt, sour, thin, or harsh.
Dong Ding is made from the Qing Xin cultivar and involves a gruelling process of cloth-wrapped rolling and charcoal roasting. This craftsmanship contributes to the tea’s depth and body. It is a tea that offers a unique taste experience and is appreciated by tea enthusiasts around the world.
Brewing: Best brewed gongfu style (i.e. with multiple, short infusions), even directly in a china cup or mug) with water just off the boil. Use sparingly – just 2-3 balls per cup!
